Recipe for Chicken Salad with Brazil Nuts

Inspired by 400 Salads Cookbook
Although I have come across a number of chicken salad recipes, this one caught my eye because of how unique it is. The unusual additions of Brazil nuts and peas initially left me skeptical, but once I tested the recipe, I was impressed with this combination of ingredients. The flavors were not the only interesting component since the recipe also recommends mixing French dressing and mayonnaise together to produce a creamy and delicious sauce. If you are in a time pinch, I suggest buying store-roasted chicken. This recipe is a nice departure from conventional chicken salad recipes, and, served in a nice brioche bun with a side of salt and vinegar chips, it is perfection.

Ingredients:
1 cup chicken breast, cooked and diced
1 cup cucumber, cubed
1 cup Brazil nuts, chopped
1 cup peas, cooked
1/2 cup French dressing
3 tablespoons mayonnaise
Salt and pepper
Yields: serving for 2
Prep Time: 20 minutes
Cook Time: 20 minutes
Method:
Combine the chicken, cucumber, nuts and peas in a bowl.
Add the French dressing and marinate in the refrigerator for 1 hour.
Add the mayonnaise and incorporate fully.
Season to taste.
Serve with salad greens or as filling for a sandwich.
