Waldorf Salad

This makes the perfect picnic salad. It’s quick to make and truly refreshing. Traditionally, the Waldorf salad is made with apples, celery, grapes and walnuts. The book suggests using salted almonds as a variation. The Waldorf Salad was created in the kitchens of the Waldorf- Astoria Hotel in New York for a charity ball in the late 1800s. It’s a classic salad that’s endured the test of time. The best part about is that you can’t go wrong with it. It uses simple ingredients that taste amazing together.
Note: I’ve tried this salad with yogurt instead of mayonnaise. Yogurt makes the salad a bit too sour for my taste, so I’d rather just add in a squeeze of lemon for a tart taste.

Ingredients:
4 green apples, cubed
4 celery ribs, cubed
12 grapes, cut in half
1/3 cup dry roasted almonds, roughly chopped
1/3 cup mayonnaise
Salt
Pepper
Juice of 1/2 lemon
Lettuce leaves
Yields: a serving for 4
Prep Time: 15 minutes
Cook Time: none
Method:
Place the apples, celery and grapes in a bowl.
Add the mayo and toss to mix.
Before serving, add the nuts and adjust the seasoning to desired taste.
Add the lemon juice.
Place the lettuce leaves on a platter and top with the salad mixture.
