Socca Bread

Ingredients:

  • 1 cup Garbanzo bean flour, shifted

  • 1 cup water

  • salt

  • 1/ 2 red pepper, sliced

Yield: serving for 6

Prep Time: 30 minutes

Cook Time: 10 minutes


Method:

  1. Preheat oven 400°F.

  2. Place a cast iron pan or an oven proof heavy bottomed pan, in the oven while you prepare the batter.

  3. In a bowl, place the water, and add the flour. Mix and let rest for 30 minutes.

  4. Carefully, remove the cast iron pan from the oven. Pour the batter, and decorate the top with the pepper slices.

  5. Place the pan back in the oven and bake for 8-10 minutes.

  6. Remove from the oven and loosen the edges. Allow to cool.

  7. Turn over on a plate or cutting board, and cut into slices.
