Hungarian Squares

Inspired by The Elegant Economical Egg Cookbook
Reminiscent of a crustless quiche or frittata, Hungarian ham squares are sure to be a crowd pleaser, either as a starter or as finger-food. I particularly enjoyed the additions of paprika and sunflower seeds; mainly because they produced interesting flavor combinations, but also because the sunflower seeds incorporated a satisfying crunch to the dish. This is wonderful and easy to make. Serve it with a nice tomato salad.

Ingredients:
6 eggs
1/2 cup sour cream
1/2 cup plain yogurt
1/2 teaspoon salt
1 cup ham, chopped
2 tablespoons parsley, chopped
2 tablespoons green onions, chopped
1/2 cup Swiss cheese, grated
2 tablespoons butter, melted
4 tablespoons sunflower seeds
paprika for garnish
Yields: serving for 6
Prep Time: 20 minuites
Cook Time: 30-35 minutes
Method:
Preheat oven 350°F and grease a 9-inch, square baking pan with butter.
In a bowl, mix the eggs with sour cream, yogurt, salt, ham, parsley, green onions, cheese, butter and 2 tablespoons of the sunflower seeds.
Pour into the pan.
Sprinkle with the remaining sunflower seeds and paprika.
Place in the oven and bake for 30-35 minutes.
Cut into squares and serve hot.
