Raw Cauliflower Salad

This is a simple salad that’s easy to assemble, and it makes a fantastic accompaniment to potato soup, baked chicken or a smashed burger. In recent years, cauliflower has become a major part of my diet and for good reason. As a source of antioxidants, vitamins and fiber, cauliflower is not only delicious but also has benefits that are crucial to a healthy lifestyle. In my own diet, I have found that cauliflower functions as a great substitute for meat.
Alongside the endive, radishes and cucumber, this salad is the perfect booster for your physical health, and it will leave you feeling great too. If you are unable to find endive, I suggest substituting it for radicchio.

Ingredients:
2-3 endive bunches, broken into individual leaves
1 small head cauliflower, sliced thin
6 radishes, sliced
1 cucumber, sliced into rounds
3 tablespoons French dressing ( or more if you wish)
Salt and pepper
Fresh chives to garnish
Yields: serving for 6
Prep Time: 20 minutes

Method:
Use the endive leaves to form a wreath on a serving platter.
In a bowl, place the cauliflower, radish and cucumber slices.
Add the dressing and toss gently to mix.
Place the mixture in the middle of the wreath.
Season with the salt and pepper and garnish with chives.
