Radish and Tahini Salad

I have always believed that a great meal is not complete without a delicious salad, and so I was very happy when I found this recipe while flipping through the pages of The Turkish Cookbook. Radishes have always been one of my favorite ingredients, and I feel that this salad showcases the reasons why it has. Radishes are crunchy, spicy and refreshing, and the combination of the creaminess of tahini and peppery, acidic grapefruit in the dressing bring out these natural qualities. Refreshing, light, and sure to please, this recipe is the perfect side dish for any meal.



Ingredients:

  • 1 cup radish

  • 1 cup watermelon radish

  • salt

For the dressing:

  • 2 cloves garlic, minced

  • 8 tablespoons tahini

  • 16 tablespoons grapefruit juice

Yields: serving for 6

Prep Time: 15 minutes

Cook Time: none


Method:

  1. Grate the radish, and place in a bowl. Add the salt and mix. After 10 minutes, place in a cheese cloth and squeeze out the liquid. Return the radish to the bowl.

  2. In another bowl, place the garlic.

  3. Add the tahini and the grapefruit juice. Mix until you get a thick and smooth sauce. If the mixture is too thick, add more juice until you reach the desired consistency.

  4. Add to the radish and mix well to combine.
