Chicken in vinegar sauce
The combination of chicken thighs soaked in warm tomato sauce with a hint of vinegar makes this meal perfect for a cozy day experience. Don't forget the fries. They'll simple soak up this amazing sauce.
This is my version of a casual southern French recipe. I made it on one dreary, rainy night. It's easy to make, and other than cooking the fries, it has very little prep time. I used chicken thighs in this recipe, but you can use chicken breast as well.

Ingredients:
1 Tablespoon Ghee
1 Tablespoon olive oil
1.5 lb. chicken thighs, skinned and boneless
1 shallot, chopped
1 medium onion, chopped
2 garlic cloves, diced
1 Tablespoon tomato paste
1 cup of dry white wine
1/4 cup of red wine vinegar
1 teaspoon of lemon juice
salt and pepper to taste
Yield: 6 servings
Prep Time: 15 minutes
Cook Time: 35 minutes
Method:
In a large sauté pan, melt the Ghee with the olive oil. Then, add the chicken pieces and sear on all sides. Remove and set aside on a plate.
Add the shallots, onions and garlic to the sauté pan. Cook on medium heat until the onions are translucent. Now add the wine, and the tomato paste. Cook the mixture until the liquid is reduced by half. Return the chicken to the sauté pan and add the red wine vinegar. Lower the heat. Allow the mixture to simmer for 30 minutes.
Before serving, adjust the seasoning by adding the salt and pepper and the lemon juice.
Serve with French fries.
