Pineapple Fruit Salad
These fun, exotic flavors do not simply look retro-chic, they also make a delicious dessert. This summer fruit dessert combines pineapple with grapes and strawberries, as well as sweeteners like maple syrup to elevate the fruit salad. The meringue topping adds a satisfying crunch to this fun dish, and, all served in the pineapple peel! This recipe brings the beach to your doorstep in a festive way!

Ingredients:
1 whole pineapple
1 orange, peeled and sliced
1 cup green grapes, sliced
1/2 cup strawberries, sliced
1/4 cup maple syrup
Meringue topping:
3 egg whites
1/4 cup honey
Yields: serving for 6
Prep time: 15 minutes
Cook Time: 5 minutes
Method:
Cut the pineapple in half lengthwise.
With a paring knife, cut around inside of the fruit about 1/4 inch from the edge.
Scoop out the pulp.
Dice the pulp and place it in a bowl.
Add the sliced orange, grapes, strawberries.
Add the maple syrup and mix to combine.
Spoon mixture back in the pineapple shells.
Preheat oven to 400°F.
In a stand mixer, beat the egg whites.
Add the honey and beat until you achieve stiff peaks.
Place the meringue in a piping bag and top the fruit mixture. Alternatively, you can spoon the meringue onto the fruit.
Place the pineapple halves on a baking sheet and bake in the oven for 5 minutes, until the meringue is set. You want the meringue to brown, but be careful not to burn.
Cool and serve.
