Pine Nut Sauce

Pine nuts are a staple of most Middle Eastern cuisine, so I was very excited to see an innovative way of preparing them. Traditionally, pine nuts garnish most dishes for a crunchy bite; however, transforming it into a sauce makes a versatile recipe that can be used in a number of ways. If you like nutty flavors, put this on savory porridge or use it as a salad dressing. You can also use it as an accompaniment for grilled fish. I would suggest toasting the pine nuts beforehand to enhance their flavor.

Ingredients:
4 ounces of pine nuts
2 garlic cloves, peeled
1 teaspoon salt
1/8 cup olive oil
Yields: 1/4 cup
Prep Time: 10 minutes
Cook Time: none
Method:
Place the pine nuts, garlic and salt in a food processor and pulse the mixture on a low setting.
While the processor is running, add the olive oil until you have a thick, smooth sauce.
