Easy recipe. It's a perfect accompaniment with any chicken or beef dish.
2 large peppers, red and yellow
1/2 cup plain yogurt
2 tablespoons olive oil
Salt and pepper
Place the peppers in a baking sheet and cook on 400°F oven until the peppers are tender.
Place the peppers in a bowl and cover with seran wrap. Leave to cool for 30 minutes. This should help make it easy to peel the peppers.
Once cool enough to handle, peel the skin, deseed and remove the stem.
Cut into strips.
Place in a bowl, and add the yogurt along with the seasoning.
Mix well to combine.
