Peanut Butter Biscuits with Golden Berries Jam

I dont often find recipes for peanut butter biscuits. I thought this one was pretty unique. Paired with golden berries jam, the flavors have the capacity to transport people back to their childhood memories, when peanut butter and jelly sandwiches provided sustenance to run around a playground for hours. To balance the tropical, candy-like golden berry jam, I added more peanut butter than the original recipe suggested, which provided a bold and creamy note to the biscuits.


Ingredients:

  • 2 cups all-purpose flour

  • 2 teaspoons double-acting baking powder

  • 1/2 teaspoon salt

  • 3 tablespoons butter

  • 3 tablespoons creamy peanut butter

  • 3/4-1 cup cold whole milk

  • 1/4 cup light brown sugar


Yields: 13 biscuits with a 2.5 inch cutter

Prep Time: 20 minutes

Cook Time: 12-15 minutes

Method:

  1. Preheat oven to 450°F.

  2. Sift the flour, baking powder and salt into a bowl.

  3. Add the butter until the mixture looks like sand.

  4. Add the peanut butter, then add the milk.

  5. Mix until the the dough comes together.

  6. Place the dough on a lightly floured counter.

  7. Knead a few times, then roll it out so that it’s 1/2-inch thick.

  8. Cut with a biscuit cutter, and place on a parchment-lined baking sheet 1-inch apart.

  9. Sprinkle the top with brown sugar.

  10. Bake for 12-15 minutes.

  11. Serve with any jam or make golden berries jam.


Golden Berries Jam:


Ingredients:

  • 1 cup golden berries

  • 1/2 cup sugar

  • 3/4- 1cup water

Yields: 1 cup

Prep Time 10 minutes

Cook Time: 30 minutes


Method:

  1. Cut the berries in half and place in a heavy bottom saucepan.

  2. Add the sugar and water.

  3. Bring to a boil, then lower the heat and let it simmer for about 30 minutes until the liquid is evaporated by half.

  4. Place in a sterilized jar.
