Oven Baked Tofu with Roasted Carrots

Ingredients:
1/2- 3/4 cup garbanzo flour
1 tablespoon dried oregano
1 teaspoon salt
1 egg
1 tablespoon water
1 (16 ounces) Firm Tofu
6 carrots, peeled and cut into sticks
6 tablespoons canola oil

Yield: serving for 4
Prep Time: 10 minuets
Cook Time:20-25 minutes
Method:
Heat oven to 450°F.
Place the carrots in a bowl, and toss with 3 tablespoons of oil and salt. Place on a cookie sheet, and cook for 15 minutes. Set aside.
Mix the garbanzo flour with oregano and salt in a plate and set aside.
In a bowl, mix the egg with water. Cut the tofu into 1/2 inch slices. Dip the tofu into the flour, then into the egg mixture, and back into the flour. Place slices on a cookie sheet pan lined with parchment paper. Add the remainder of the oil.
Bake the tofu for 7 minutes on each side.
