Oven Baked Tofu with Roasted Carrots

Ingredients:

  • 1/2- 3/4 cup garbanzo flour

  • 1 tablespoon dried oregano

  • 1 teaspoon salt

  • 1 egg

  • 1 tablespoon water

  • 1 (16 ounces) Firm Tofu

  • 6 carrots, peeled and cut into sticks

  • 6 tablespoons canola oil


Yield: serving for 4

Prep Time: 10 minuets

Cook Time:20-25 minutes


Method:

  1. Heat oven to 450°F.

  2. Place the carrots in a bowl, and toss with 3 tablespoons of oil and salt. Place on a cookie sheet, and cook for 15 minutes. Set aside.

  3. Mix the garbanzo flour with oregano and salt in a plate and set aside.

  4. In a bowl, mix the egg with water. Cut the tofu into 1/2 inch slices. Dip the tofu into the flour, then into the egg mixture, and back into the flour. Place slices on a cookie sheet pan lined with parchment paper. Add the remainder of the oil.

  5. Bake the tofu for 7 minutes on each side.
