Onion Rings

Inspired by The Steak Book
Onion rings are definitely one of my guilty pleasure, and they were very tasty with Ribeye steak or a New York Strip. Really, onion rings can go well with just about any grilled meat, pork, lamb chops or grilled chicken.


Ingredients:
2 white onions, sliced
2 cups heavy cream
1 teaspoon salt
1 to 1 1/2 cups all- purpose flour
Oil for frying, I used peanut oil about 2 inches deep
Yields: serving for 4
Prep Time: 30 minuites
Cook Time: 30 minuites
Method:
Place the sliced onions in a large bowl and add the heavy cream and salt. Let sit for 30 minutes, covered in the refrigerator.
When ready to use, place a handful of the onions in a plastic bag.
Add some of the flour, enough to coat the rings.
Shake off excess flour and add the rings in the hot oil.
Fry for 5-6 minutes, until the are lightly browned.
Drain on a paper towel and sprinkle with more salt.
