Mayonnaise Rolls

This find was a nice surprise. I’d never made these rolls before, and they were quick, easy and delicious. The first batch I made was the original recipe, but then I wondered what it’d taste like vegan.

It was equally tasty. Honestly, other than the color after baking for 20-25 minutes, I couldn’t tell a difference in the taste. The true test around my house is how long it lasts. These only lasted a day!


Ingredients:

  • 1 cup self-rising flour

  • 2 tablespoons mayonnaise

  • 1/2 cup milk

Vegan option:

  • 1 cup self-rising flour

  • 2 tablespoons soy-free vegeniase

  • 1/2 cup coconut milk

Yields: 6 muffins

Prep Time: 15 minutes

Cook Time: 20-25 minutes

Method:

  1. Preheat oven to 400°f.

  2. Grease 6 muffin tins.

  3. In a bowl, place the flour and add the mayonnaise/vegenaise. Mix until the flour looks like wet sand.

  4. Drizzle in the milk/coconut milk.

  5. Mix until the batter is wet and smooth.

  6. Spoon 2 tablespoons of the batter into the tins.

  7. Bake for 20-25 minutes.

  8. Serve warm.
