Lobster Roll Recipe

A few years on a trip to Maine visiting family, we ordered lobster rolls which were just amazing; the meat was sweet and melt in your mouth tender with a hint of saltiness. Recently, a friend surprised us when he sent us a few lobsters from Maine. I wanted to make a simple dressing for the lobster meat that enhanced the flavor without overpowering it.

Ingredients:
2 (1.5 lb each) fresh lobster
1/2 cup mayonnaise
2 tablespoons Worcestershire sauce
1/2 teaspoon horseradish
salt and pepper
brioche rolls
2 heads of broccoli florets
1/4 cup soy sauce
1 tablespoon sesame seeds
Yield: serves 4
Prep Time: 20 minutes
Cook Time: 25 minutes

Method:
In a big pot, boil water.
Add the lobster, and cook for 10 min. Remove, plunge into an ice bath. When cool enough to handle, remove meat from the shell. Cut into 1 inch pieces, add salt, and pepper. Set aside.
In a bowl, mix the mayonnaise with the Worcestershire sauce, and horseradish.
Add the lobster meat. Place in the refrigerator until you steam the broccoli.
Boil water in a pot with some salt. Add the broccoli florets.
Cook for 7 minutes. Remove from the boiling water, and plunge into ice bath for 3 minutes (to stop the cooking) .
With a slotted spoon remove the broccoli from the cold water. Place in a bowl, and add soy sauce and sesame seeds.
Remove lobster from refrigerator.
Place inside the sliced brioche roll, and serve with the broccoli on the side.
