He- Man Casserole Recipe

This savory casserole is served with a creamy, tomato-based sauce that thickens as it cooks. It’s delicious served with quinoa, tortillas, homemade guacamole, sour cream and shredded cheese. You can even make it into a burrito or a quinoa bowl. Or you can just place the meat in the casserole dish, and follow the original recipe.

If you wish to have more of a runny sauce, just add water or broth. Doing that would make this dish delicious with quinoa or rice.



Ingredients:

  • 2 lb. skirt steak

  • 3 tablespoons ghee

  • 1 large onion, chopped

  • 1 clove garlic, chopped

  • 2 tablespoons flour

  • 1 cup celery, chopped

  • 1 cup sour cream

  • 1 (8 ounce) can tomato sauce

  • 1 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 tablespoon Worcestershire sauce

Yield: serving for 6

Prep Time: 10 minutes

Cook Time: 1-11/2 hours


Method:

  1. In a Dutch oven melt the ghee.

  2. Cut the steak into 1-inch strips. Add to the ghee. Cook for a few minutes.

  3. Add the onion and garlic.

  4. Add the flour and cook for 5 minutes.

  5. Add the remaining ingredients (I didn’t add the mushrooms as suggested in the original recipe)

  6. Cover, and let cook for 1-11/2 hours until the meat is tender (another change from the original recipe).

  7. Serve with quinoa or rice.
