We absolute love guacamole in my house, so I try to make it often. I use fresh roasted tomatoes in the mix and top it with some sun-dried tomatoes.
2 tomatoes, quartered
1 tablespoon olive oil
4 green onions, roughly chopped
1 garlic clove
2 teaspoons ground cumin
3 tablespoons lime juice
Salt and pepper
1 tablespoon sun-dried tomatoes
Yields: serving for 6
Prep Time: 20 minutes
Cook Time: 20 minutes
Preheat oven 350°f.
In a bowl, coat the tomatoes with oil. Place on a baking sheet and bake for 20 minutes.
In a food processor, add the avocado pulp and the roasted tomatoes.
Add the onions, garlic and cumin.
Pulse quickly, then add the lime juice. Pulse until the avocados are pureed, but still chunky.
Place the avocado mixture in a bowl. Season to taste. Top with the sun-dried tomatoes.
