6 medium size, Yukon gold potatoes, unpeeled and cut
Vegetable oil for frying
1/4 cup salt for the brine
salt to taste
Yield: serving for 4
Prep Time: 1-2 hours
Cook Time: 40 minutes
An hour or two before cooking, place the potatoes in a bowl add cold water to cover.
Add the1/4 cup salt.
When ready to cook, heat the oil in a wide saucepan.
Remove the potatoes from the water bath, and place on a kitchen towel to dry.
Working in batches, place the potatoes in the saucepan. Cook each batch for 10-12 minutes.
Once cooked remove, and place on paper towel to absorb the extra oil.
Season with salt.
