French Fries

  • 6 medium size, Yukon gold potatoes, unpeeled and cut

  • Vegetable oil for frying

  • 1/4 cup salt for the brine

  • salt to taste

Yield: serving for 4

Prep Time: 1-2 hours

Cook Time: 40 minutes


  1. An hour or two before cooking, place the potatoes in a bowl add cold water to cover.

  2. Add the1/4 cup salt.

  3. When ready to cook, heat the oil in a wide saucepan.

  4. Remove the potatoes from the water bath, and place on a kitchen towel to dry.

  5. Working in batches, place the potatoes in the saucepan. Cook each batch for 10-12 minutes.

  6. Once cooked remove, and place on paper towel to absorb the extra oil.

  7. Season with salt.
