Colcannon

I was unaware of this dish before I tested it. Colcannon is a traditional Irish recipe, and I see why it’s stayed popular through the years. The addition of kale to the mashed potatoes, makes this dish perfect as a side dish. Served alongside a ham steak or grilled salmon, this simple dish of mashed potatoes is delicious.

Ingredients:
2 cups yellow potatoes, peeled and cubed
1 bunch of kale, torn into small small pieces
1/2 cup whole milk
Salt to taste
Yields: serving for 4-6
Prep Time: 20 minutes
Cook Time: 30 minutes
Method:
In a heavy bottom saucepan, add the potatoes. Cover with water and add salt.
Boil until the potatoes are tender. Remove from heat.
Drain a little, and roughly mash with a fork. Add the milk.
In another saucepan, place about 2 cups of water and add salt.
Once the water boils, add the kale.
Cook for 2 minute, then remove with a strainer or slotted spoon.
Add the kale to the mashed potatoes.
Simmer the masked potato mixture with the kale for a few minutes. Serve hot.
