Cod with Garlic-Cashew Sauce

This is a very easy recipe to make that works well with any side. Similar to the British tradition of fish and chips, battered and fried cod is mild-tasting and immensely comforting. The cashew sauce adds a modern twist to this old-fashioned way of preparing fish, giving it a vibrant, slightly spicy and very flavorful finish.

Ingredients:
1 lb fresh cod
1 cup all-purpose flour
1 teaspoon salt
Dash of pepper
1 teaspoon baking powder
1 cup water
Oil for frying
Yields: serving for 2
Prep Time: 20 minutes
Cook Time: 15 minutes
Method:
In a bowl, combine the flour with the salt, pepper and baking powder.
Add the water. You should have a thick batter.
Heat the oil.
Cut the cod into 1-inch chunks.
Dip into the batter and place in the hot oil.
Cook for 5 minutes on each side.
Drain on a paper towel.
Serve with garlic sauce
Garlic- cashew Sauce
Ingredients:
3 gloves garlic
1 teaspoon salt
1 cup cashews, soaked in water for about 1 hour before use
1 cup mashed potatoes
1/2 cup lemon juice
1/2 cup olive oil
1/2 cup water
Yields: 2 cups
Prep Time: 30 minutes
Cook Time: none
Method:
In a food processor, place the garlic, salt, drained cashews, and mashed potatoes.
Mix until it forms a thick paste.
Add the lemon juice. Mix to combine.
Stream the olive oil into the mixture.
Add the water.
