Chef Salad

Inspired by 400 Salads Cookbook

In my opinion, a chef salad is a recipe that must be creative. For this recipe, I took ideas from the cookbook and most of the suggested ingredients, but also decided to add a bit of my own twist. This salad makes a full meal served with homemade bread. Feel free to top your chef salad with hard-boiled eggs, ham and turkey.




Ingredients:

  • 1 clove garlic, cut in half

  • Small lettuce head, chopped

  • 1/2 cup celery, diced

  • 1/2 cup radish, sliced

  • 2 tomatoes, quartered

  • 4 scallions, chopped

  • 1/2 cup cucumbers, chopped

  • 1/2 red cabbage, thinly sliced

  • 4 Brussels sprouts, thinly sliced

  • 1 green pepper, chopped

  • 1 cup baby arugula

  • 2 tablespoons blue cheese

  • 1/2 cup French dressing

  • 3 tablespoons bacon, cooked and crumbled

Yields: serving for 6

Prep Time: 30 minutes

Cook Time: none

Method:

  1. Rub the inner surface of a salad bowl with half of the garlic.

  2. Start building your salad: place the lettuce the bottom of a bowl, add the celery, radish, tomatoes, scallions, cucumbers, cabbage, green pepper, Brussel sprouts and arugula.

  3. Place the dressing in a blender. Add the blue cheese and blend to combine.

  4. When ready to serve, drizzle dressing on the salad, toss and serve.
