Chef Salad

Inspired by 400 Salads Cookbook
In my opinion, a chef salad is a recipe that must be creative. For this recipe, I took ideas from the cookbook and most of the suggested ingredients, but also decided to add a bit of my own twist. This salad makes a full meal served with homemade bread. Feel free to top your chef salad with hard-boiled eggs, ham and turkey.


Ingredients:
1 clove garlic, cut in half
Small lettuce head, chopped
1/2 cup celery, diced
1/2 cup radish, sliced
2 tomatoes, quartered
4 scallions, chopped
1/2 cup cucumbers, chopped
1/2 red cabbage, thinly sliced
4 Brussels sprouts, thinly sliced
1 green pepper, chopped
1 cup baby arugula
2 tablespoons blue cheese
1/2 cup French dressing
3 tablespoons bacon, cooked and crumbled
Yields: serving for 6

Method:
Rub the inner surface of a salad bowl with half of the garlic.
Start building your salad: place the lettuce the bottom of a bowl, add the celery, radish, tomatoes, scallions, cucumbers, cabbage, green pepper, Brussel sprouts and arugula.
Place the dressing in a blender. Add the blue cheese and blend to combine.
When ready to serve, drizzle dressing on the salad, toss and serve.
