Caraway Seed & Raisin Soda Bread

This is an easy and quick recipe to make. The original recipe calls for using corn oil. I didn't have corn oil on hand, so I opted to use vegetable oil. A wonderful tasty bread that can be served with cheese or warmed up and eaten with sweet butter.

Ingredients:
4 cups all- purpose flour
2 tablespoons granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1teaspoon baking soda
1/2 cup vegetable oil
1 cup golden raisins
1 tablespoon caraway seeds
1 cup buttermilk
1 egg
Yields: 1( 7 inch) round loaf
Prep Time: 30 minutes
Cook Time: 35-40 mintues
Method:
Preheat oven 350°F.
Sift together in a bowl the flour with the sugar, baking soda, baking powder and salt.
Add the oil and mix with a fork.
Stir in the raisins and the caraway seeds. Set aside.
In a small bowl, mix the buttermilk with the eggs.
Gradually add the eggs mixture to the flour mixture and stir until it forms into a soft dough.
Turn out unto a floured surface and knead lightly 10 times. Shape into a ball.
Place on parchment lined baking sheet.
Bake for 35-40 minutes or until browned.
Allow to cool before slicing and serving.
