Caraway Seed & Raisin Soda Bread

This is an easy and quick recipe to make. The original recipe calls for using corn oil. I didn't have corn oil on hand, so I opted to use vegetable oil. A wonderful tasty bread that can be served with cheese or warmed up and eaten with sweet butter.


Top soda bread is the caraway seed & raisin. Bottom soda bread is the dates with almonds

Ingredients:

  • 4 cups all- purpose flour

  • 2 tablespoons granulated sugar

  • 3 teaspoons baking powder

  • 1 teaspoon salt

  • 1teaspoon baking soda

  • 1/2 cup vegetable oil

  • 1 cup golden raisins

  • 1 tablespoon caraway seeds

  • 1 cup buttermilk

  • 1 egg

Yields: 1( 7 inch) round loaf

Prep Time: 30 minutes

Cook Time: 35-40 mintues


Method:

  1. Preheat oven 350°F.

  2. Sift together in a bowl the flour with the sugar, baking soda, baking powder and salt.

  3. Add the oil and mix with a fork.

  4. Stir in the raisins and the caraway seeds. Set aside.

  5. In a small bowl, mix the buttermilk with the eggs.

  6. Gradually add the eggs mixture to the flour mixture and stir until it forms into a soft dough.

  7. Turn out unto a floured surface and knead lightly 10 times. Shape into a ball.

  8. Place on parchment lined baking sheet.

  9. Bake for 35-40 minutes or until browned.

  10. Allow to cool before slicing and serving.
