Butter Scotch Pie

  • 1 9-inch pie crust

  • 1 cup light brown sugar

  • 1 tablespoon butter

  • 1 egg yolk

  • 1 egg white

  • 1/4 cup granulated sugar

  • 2 tablespoons all-purpose flour

  • 1 cup whole milk

  • 1 teaspoon vanilla

Yield: 1 (9 inch) pie

Prep Time: 25 minutes

Cook Time: 20 minutes


  1. Preheat oven to 350°F.

  2. Prebake the crust for 10 minutes. Remove and set aside.

  3. In a saucepan, place the brown sugar, butter, egg yolk, flour and milk. Place on medium heat. Stir until the mixture becomes thick. Add the vanilla. This’ll take around 10 minutes.

  4. Add the mixture to the pie crust. Bake the pie for 12 minutes. While it bakes, make the meringue by mixing the egg white with the 1/4 cup of granulated sugar. Beat until you reach soft peaks.

  5. After the 12 minutes of cooking, remove the pie from the oven. Spread the meringue on top. Broil for 7-8 minutes.

  6. Decorate with chocolate sauce.
