Bread Pudding

Inspired by Princess Pamela's Soul Food Cookbook
Not everyone is a fan of bread pudding, but I personally love the flavors of this dish. Princess Pamela’s recipe doesn’t particularly use hard- to- find ingredients. The comforting, autumnal spices alongside the tropical notes of the fruit sauce, and the freshness from the mint, create an exciting combination of flavors that I particularly enjoyed.

4 cups sliced white bread, crust removed, cut into 1-inch squares
4 cups whole milk
3 eggs
1 cup granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 lemon rind
2 teaspoons vanilla extract
2 tablespoons butter, melted
Fruit sauce
Yields: serving for 4-6
Prep Time: 30 minutes
Cook Time:1 hour
Preheat oven to 350°f.
Place the bread cubes in a bowl.
Heat the milk and pour it over the bread cubes. Set aside while the bread soaks up the milk.
In a separate bowl, beat the eggs with the sugar.
Add the salt, cinnamon, nutmeg, lemon rind, vanilla extract and melted butter.
Place the egg mixture in a casserole dish and add the soaked bread cubes.
Mix to combine
Place in the oven with a pan of hot water for 1 hour.
Serve warm or cold with the fruit sauce and whipped cream.
Fruit Sauce:
2 cups strawberries, sliced
1/2 cup gooseberries, optional
1/4 cup pomegranate
1/2 cup granulated sugar
Mint to garnish
Mix all the fruit in a bowl.
Add the sugar and mix to incorporate.
Add the mint.
