Inspired by Eating in Bed Cookbook


Welcome back to another amazing recipe revamp from the ‘Eating in Bed’ Cookbook! When talking about comfort food, potatoes, ham, cheese, and cream are always going to be a winning combination, which is why I absolutely love this classic recipe! The ingredients are all tenets of a comforting side dish that pairs well with any main meat dish. If you are vegetarian, you can leave out the ham to produce something more akin to potato casserole— an equally flavorful alternative. All in all, Blissful Pig met the theme of ‘eating in bed’ well because of its warm and comforting ingredients. Happy Cooking!

Blissful Pig without Ham

Ingredients:

  • 1/2 lb ham, sliced thin

  • 4 Yukon potatoes, sliced thin

  • 1- 1/2 cups heavy cream

  • 1 cup grated Swiss cheese

  • Salt and pepper

Yields: serving for 4

Prep Time: 25 minutes

Cook Time: 45-55 minutes


Method:

  1. Preheat oven 350°F.

  2. Line a 6-inch long loaf pan with ham, with the ham overlap the edges of the pan.

  3. Layer the sliced potatoes until it reaches about halfway up the pan.

  4. Add 1/2 of the grated cheese, and top with the remaining ham slices.

  5. Add the remaining potatoes, and fold the overlapping ham over the potatoes.

  6. Pour the seasonings and the heavy cream.

  7. Top with the remaining cheese and bake for 45 minutes.

  8. When poked with a fork, the potatoes should be tender. If not, leave in the oven for an extra 5-10 minutes.
