Apple Potato Hash

For my Sunday brunch, I decided to make a great apple hash. I chose to use apples for the hash with the potatoes because I wanted to make a sweeter fall side dish. I also happened to have some extra apples I wanted to use up. Apple hash goes perfectly with a pimento cheese omelette or scrambled eggs. I also recommend serving it with a pork tenderloin for dinner. This is a very versatile and hearty side dish that is sure to appeal to a variety of flavor pallets.


Ingredients:

  • 4 yellow potatoes, with skin, boiled until tender

  • 1 green pepper, seeded and diced

  • 2 tablespoons olive oil

  • salt and pepper

  • 1 golden delicious apple, unpeeled and sliced

Yield: serving for 4

Prep Time: 15 min

Cook Time: 10 minutes

Method:

  1. Boiling the potatoes can be done a day before and placed in the refrigerator overnight.

  2. In a saucepan, heat the olive oil.

  3. Add the diced peppers.

  4. Slice the potatoes, and add to the saucepan. Cook for about 5-6 minutes.

  5. Add the apple slices.

  6. Cook for 3 minutes more.

  7. Remove from the heat. Add salt and pepper.
