Apple Potato Hash

For my Sunday brunch, I decided to make a great apple hash. I chose to use apples for the hash with the potatoes because I wanted to make a sweeter fall side dish. I also happened to have some extra apples I wanted to use up. Apple hash goes perfectly with a pimento cheese omelette or scrambled eggs. I also recommend serving it with a pork tenderloin for dinner. This is a very versatile and hearty side dish that is sure to appeal to a variety of flavor pallets.

Ingredients:
4 yellow potatoes, with skin, boiled until tender
1 green pepper, seeded and diced
2 tablespoons olive oil
salt and pepper
1 golden delicious apple, unpeeled and sliced
Yield: serving for 4
Prep Time: 15 min
Cook Time: 10 minutes
Method:
Boiling the potatoes can be done a day before and placed in the refrigerator overnight.
In a saucepan, heat the olive oil.
Add the diced peppers.
Slice the potatoes, and add to the saucepan. Cook for about 5-6 minutes.
Add the apple slices.
Cook for 3 minutes more.
Remove from the heat. Add salt and pepper.
