Apple Charlotte

This moist bread pudding is packed with comforting and delightful flavors. It’s safe to say that this recipe defines comfort food at its core and can be a healthy choice for your sweet tooth.
Using gluten free biscuits made this Apple Charlotte even better. Orange Dot Baking Company sells product that are simply delicious toasted and served with butter. They taste amazing and are a healthy alternative. By using ingredients such as oat flour, quinoa and bran, their biscuits and muffins are just exquisite.
Combining the cinnamon raisin biscuits with tart apples, jam, coconut oil and coconut sugar makes this biscuit more versatile. But, we did cheat a little and added vanilla creme fraiche on top.

Ingredients:
1 package of Orange Dot Baking Company cinnamon raisin biscuits
4 tablespoons coconut oil
4 Granny Smith apples, peeled and sliced
1 cup coconut sugar
1 (10 oz.) jar peach jam
1 cup water

Yield: serving for 8
Prep Time: 30 minutes
Cook Time: 1 hour
Method:
Preheat oven 350°F.
Spray a casserole pan with coconut oil spray.
Cut four biscuits in half. Spread 2 tablespoons of coconut oil on each slice.
Line the casserole dish with biscuits. Top the biscuits with sliced apples. Add the coconut sugar on top of the apples. Slice the remaining biscuits and place them on top of the sugar.
Dot with the remaining coconut oil.
Spread the peach jam on the top.
Top with nutmeg.
Add the water.
Place the casserole dish in the oven and bake for 30 minutes. Cover loosely with foil and bake for another 30 minutes.
