3 Recipes for Steak Sauce

Inspired by The Steak Book

All three sauces can go very well with steak or pork.


Sauces from left to right: Epicurean Sauce, Cowboy Sauce and Mustard Sauce


Mustard Sauce

Ingredients:

  • 2 tablespoons butter

  • 1 teaspoon dry mustard

  • 1 teaspoon Worcestershire sauce

  • 1 tablespoon red wine

  • 1/2 tablespoon tomato paste

  • 1 tablespoon heavy cream

Yields: 1/2 cup


Method:

  1. In a saucepan, melt the butter. Add the mustard, Worcestershire sauce, red wine and tomato paste.

  2. Cook for 5 minutes on low heat.

  3. Whisk in the cream and cook until slightly thick, about 3 minutes.

  4. Remove from heat and serve.


Cowboy sauce

Ingredients:

  • 4 tablespoons butter

  • 1/2 cup water

  • 1 tablespoon apple cider vinegar

  • 1/2 teaspoon dry mustard

  • 1/2 teaspoon granulated sugar

  • 1/4 teaspoon Worcestershire sauce

  • 1/4 teaspoon salt

  • 1/4 teaspoon chili powder

  • 1/4 teaspoon sweet paprika

  • Half and onion, chopped finely

Yields: 1 cup

Method:

  1. In a saucepan, melt the butter.

  2. Add the onions and cook until the onions are well browned.

  3. Add the rest of the ingredients, and simmer the sauce for 30 minutes.

  4. Serve hot or cold.


Epicurean Sauce

Ingredients:

  • 1/2 cup heavy cream

  • 3 tablespoons mayonnaise

  • 1/2 tablespoon grated horseradish

  • 1/2 teaspoon dijon mustard

  • Salt

  • Cayenne pepper

Yields: 1/2 cup

Method:

  1. In a bowl, whisk the heavy cream with the mayonnaise.

  2. Add the grated horseradish and the mustard. Mix until well combined.

  3. Season to taste with salt and a dash of cayenne.
